Seitan (I) Step by step
Seitan is the diva of vegetarian / vegan. All vegetarian (not vegan!) Should know how to cook a good seitan ( or at least know where to buy it: P)
There are basically two ways to cook seitan: Flour basis "0", based on flour or gluten. The first is much slower than the second, but has the advantage of the flour can be found anywhere and cheap. The second is faster to do is a bit more expensive (well, always cheaper than buying meat ...)
Today I will explain how to make seitan long form: we need a kilo of flour, seasonings, and a little patience.
Ingredients:
- 1 kg of flour "0"
- ½ cup soy sauce
- A sprig of rosemary, lemon Middle
- vegetable broth ½ *
- Any other seasoning you like ( cumin, paprika, oregano, etc)
Preparation:
Make a bun with a kilo of flour and water. The amount of water has to be enough to make a dough that is kneadable (Forgive the redundancy). It is best to add water little by little, go kneading, to form a nice roll.
This cute little ball we will be submerged in water overnight.
The next day the fun begins. What you need to do is separate the starch from wheat protein. This is done kneading the pastry under water. You'll see that the water is white, that is starch. We just want the protein, so the water will shoot.
The procedure must be repeated several times. Knead the scone. Change the water. Knead. Change water. Knead. Change the water .... To infinity ... or until the water runs clear half.
And soon. Eventually we will have our beautiful seitan. I use a large colander to help with the laundering.
Now we have to cook it, putting it in boiling water with all the condiments (soy sauce, vegetable broth, rosemary, etc). The time depends on the size of seitan, but approximately takes 30 minutes.
* In Uruguay the broth "knorr" vegetables are not vegetarian. In indredientes reads "beef juice" (a term quite reprehensible, and totally misleading, Knorr lords: the orange juice gives the cows NO). If there are other brands vegetarian / vegan. You have to read labels (or avoid using them ...)

No cholesterol and also helps reduce blood cholesterol levels. Low in fat. Contains abundant lecithin. Seitan has more calcium and minerals than meat.
